After the great surprise of the Argentine restaurant Don Julio, rising to the top of the list of the 50 best restaurants in Latin America, the budgets by country begin.

Peru, although it lost number 1, has 11 restaurants, Argentina managed to finish 10, Brazil and Mexico 9. Meanwhile, Colombia and Chile each have four places on the list. Ours were El Chato, Harry Sasson, Leo and Celele, counted in the same order.

The list was atypical, not only for the virtual form of its realization, but because it explained that for the configuration of this ranking elaborated by the vote of accredited diners and chefs, the performance of the establishments was taken into account until which initiated the various quarantines in the region.

Bogota’s restaurant El Chato has kept its place, number 7, and with it the title of best restaurant in Colombia in the list of the 50 best restaurants in Latin America.

This time Leo, by Leonor Espinosa, had a visible downturn, he moved from position number 8 to 27, although it should be noted that 2020 was a transition for this culinary proposal, whose new location plans to open in March next year.

Harry Sasson ranked at number 25 and Cartagena’s Celele restaurant debuted at number 49, one year after winning the Miele One To Watch award, reserved for revelation proposals. We present the current Colombian chefs and some of the wonders that come out of their kitchens.

Since winning the title of best of Colombia last year, El Chato has begun work on a tasting menu that was transformed behind closed doors during the months of quarantine. “We started working with ferments, we increased the use of vegetables and seafood. The letter is lightened, “says Clavijo. The tasting menu returns next week, only on the second floor. In the first floor he holds the letter.

“My idea has always been to give the customer what he wants,” says the chef who had to close several restaurants in 2020, including Harry’s Bar. Therefore, at the request of his guests, he integrated the dishes of this site in its flagship: Harry Sasson. Then, in addition to its classics like pepper steak or grouper with eggplant, customers who have missed them can enjoy crusted rice, spinach pie and crab nachos.

Leo, winner of the 2020 Chef’s Choice Award at this same ceremony, had to wait a year to move his flagship restaurant from downtown Bogota to the Zona Rosa. The new Leo, with its new culinary experiences, will open in March. During this year, the chef has tried his hand at home delivery and from that proposal a small restaurant was born – for very few people – which will open very soon under the name of Mi Casa.

Last year, Cartagena’s Celele restaurant won the One To Watch award, which gave it the visibility it needed to enter the list. After the temporary closure, it’s back with safety pins like duck pebre with yam mote and celele pork and its general concept of contemporary Colombian Caribbean cuisine. Alternative letter and tasting menu in a kitchen constantly recreated with seasonal ingredients.
