GaultMillau Switzerland awards Stefan Heilemann (37) from Widder in Zurich the title of “Chef of the Year 2021” and 18 points. It happens to Tanja Grandits (50). This spring alone, the Heilemanns from Germany moved from Atlantis by Giardino to the city center and brought the entire eleven-man brigade with them. The jury was delighted with his “classic French cuisine with surprising and balanced Asian elements”. GaultMillau boss Urs Heller (67) says: “We have had Stefan Heilemann on our radar for a long time. Now the time is ripe for the really important title. “
Born in Bern, Michèle Meier (42) of the Lucide restaurant at KKL Luzern was named “Chef of the Year” with 16 new points. This is also a tribute to his recently deceased teacher Nik Gygax († 62) of Löwen Thörigen BE. Thailand’s Chatsorn Pratoomma also has 16 spots in the Spices Kitchen & Terrace restaurant on the Bürgenstock above Lucerne. Bernadette Lisibach, “Chef of the Year 2015”, has new 17 points in the Neue Blumenau in Lömmenschwil SG.

The new edition of GaultMillau includes 830 restaurants
A total of 830 restaurants are listed in the “yellow book”. 83 have recently been discovered, 80 cooks get an extra point, 30 cooks give up one. Covid-19 is affecting the entire restaurant industry in all its facets, including the best restaurants. However, according to Urs Heller, it has never been a problem not to publish the 2021 Guide, but to support the bosses even in difficult times.
The number of 19-point representatives is decreasing for other reasons: Valais Dider de Courten (52) leaves the flagship gastronomy, so the illustrious group now includes seven names who have confirmed their evaluation with flying colors: Andreas Caminada (Fürstenau GR ), Philippe Chevrier (Satigny GE), Franck Giovannini (Crissier VD), Tanja Grandits (Basel), Peter Knogl (Basel), Heiko Nieder (Zurich) and Bernard and Guy Ravet (Vufflens-le-Château VD).
Newcomers and discoveries
The three “climbers of the year” are Jérémy Desbraux (Maison Wenger, Le Noirmont JU, 18 points), Markus Arnold (Steinhalle, Bern, 17 points) and Sebastian Rösch (Mesa, Zurich, 17 points).
Dominik Hartmann (Magdalena, Rickenbach SZ, 15 points) and Zineb Hattab (Kle, Zurich, 14 points) were nominated “Discoveries of the Year”. Franck Pelux (Lausanne Palace, 16 points) and Luca Bellanca (Meta, Lugano, 15 points).
For the first time, the title “Host of the Year” will be awarded. Sergio Bassi, maître and sommelier, collects it at the Castello del Sole in Ascona TI. “Sommelier of the year” is Lisa Bader (Dolder Grand, Zurich), Christophe Loeffel (Pont de Brent above Montreux VD) is named “Pastry Chef of the Year”.
