The experiments were conducted on mice, where a quantity of food was frozen and then presented to them for 3 weeks.

The scientists found that although both systems contained the same amount of fat, protein and carbohydrates, the mice following the Japanese diet had a low percentage of fat accumulated around the abdomen and a low level of cholesterol in the blood. Tests have shown that it is better to eat fish rather than meat and rice instead of wheat.

According to Tsuyoshi, food ingredients are not the only factor that positively affects a person’s life expectancy and health, but also the way they cook. Fried foods are also absent in Japanese cuisine and chefs often use steam or cook in the normal way, and the dishes contain some salt and sugar and aromatic spices are used.
